I had Skate fin at a French restaurant yesterday.  I'm not sure where that sits in the Peat world.  It's a sting ray so it is a bottom feeder and is composed mostly of cartilage.  I guess they can live in cold or warm water.  
Any thoughts?
Btw, it was very good.

I buy skate occasionally when it looks particularly fresh. It's marked "wild," it's not expensive, and all those bones yield very gelatinous juices. I think it tastes pretty good, too.

I find skate and rock salmon taste a bit earthy. They're both related to sharks (which don't have bones, it's all cartilage), don't know if that's why they taste similar though.
