Ingredients:
1 medium carrot
1/2 medium cucumber
1 teaspoon vinegar
2 tablespoons coconut oil
1 tablespoon raw honey
1/4 teaspoon salt
Melt honey and coconut oil in bowl and add vinegar. Make sure all the seeds are taken out of the cucumber and dice up and add to bowl. Grate the carrot and add to bowl along with salt. Enjoy :)
I have been making this lately and really enjoy it more than the plain carrot salad. With the honey added I can go a full 2 hours not eating anything else after the carrot salad for maximum benefit. Also it tastes pretty good and I now look forward to the carrot salad.
