B Vitamins In Greens Mineral Broth?

I was just flicking through Kate Deerings book on how to improve metabolism and found a simple recipe for green veggies mineral broth. It says that it provides magnesium and b vitamins. I was surprised by the b vitamins. Are there all of the b vitamins and in sufficient amount that it could replace liver, could it be used instead of a b complex supplement ? I used spinach and red chard. Also what about making this from nettles, what are the nutrients there?thanks!

assuming you're using simmer heat, and also using a lid, a good amount of the b-vitamins in greens would stick around in a broth. B-5 looses a lot of it's potency when heated, so this one probably wont still be active in the broth. Also, folate doesn't survive high heat, but using a simmer should be fine.

Try checking some of the greens you want to use on cronometer or self nutrition data to see their b-vitamin content. I would suspect the greens would lack folate, b-5, b-12, and selenium when compared to liver.
