I've only used Knox gelatin thus far, and whenever I add hot water to the steeped gelatin, it foams up very heavily.

I was wondering if anyone else had this reaction happen, and what brand and type of gelatin they used.

I don't know the significance of this reaction, but I know that it never happened when microwaving actual gelatin broths, and the real thing seemed to give me a better mood. I've read about and seen the videos regarding gelatin production, and it seems likely that there would be bacterial contamination.

Animal meats and gelatinous parts already contain bacteria. If you cook it thoroughly you might kill most of the bacteria but the endotoxin cannot be gotten rid of by any means, at least that anyone has currently tried.

The foaming is caused from the gelatin's "bloom" strength if I remember correctly. It's normal when stirring it up for it to cause some foaming bubbles. I use Knox as well and it happens to me too, so nothing to worry about.
