I squeeze out the juice of two to 3 oranges, and strain off the pulp, add it and ice to the blender, along with a big pinch of flakey salt, a neutral tasting raw white honey or sugar, and an equal amount of milk as the orange juice, and blend it. Adding in the zest of an orange and maybe a few drops of vanilla extract isn’t necessary, but for company sometimes I will add it. I have one everyday!
Sounds delicious!!!

I made these delicious pancakes for my kids this morning! So delicious and they smelled a bit like donuts while cooking, I'm not sure why.


I used sprouted spelt flour, blueberries, half coconut oil/half butter, nonfat greek yogurt, low fat milk....cooked them in ghee, added cinnamon, vanilla, and orange zest...SO yummy! I know it sounds like a lot of tweaks but that was just what I had on hand.

Are you finding any good oranges right now? I sort of gave up on my OJ spree because the local fruit trees were done and the oranges/OJ at the store tasted bad :(
Hi coffeelover! I have had good luck getting good oranges, buying the Cara Cara oranges these past three or so months, but now they are done with their season I guess. I bought navel oranges the other day and they were really sweet. The problem is they are all so expensive, so I planted a late summer navel orange tree and I am getting the ground ready, this past two mornings, for a Cara Cara tree. I have been working myself to the bone planting tons of fruit this past month and a half. I am obsessed with the idea of growing my own fruit!

These looks amazing! I can’t wait until the blueberries I planted give me lots of these pancakes!

Recently though I found these simple butter-made shortbread cookies, that aren’t really sweet, and thought they would make a great base for a Graham cracker, or shortbread, crust for cheesecake and other pies I make. Today I put my idea to the test and put a package of the cookies into a food processor with a couple of tablespoons of unsweetened butter and some sugar, processed it into coarse crumbs, and pressed it into a glass pie dish, then baked it in a preheated 350 degree oven for 3 minutes, until it was a bit golden in color, and cooled it completely before filling it. It was perfect!

Yum!! I love that this is higher in protein too from the greek yogurt. Definitely going to make this in the summer!

I planted 6 blueberry bushes, with 3 different types, to get some sweet ones, which are rare to come by, but yesterday my local health food store had a local farm bring in some fresh picked one, that didn’t get picked early and spend a week getting from the vine to the store. They were in a bin with a scoop, for $7 a pound, and boy were they perfect! I had to make this pie with them. What a fantastic breakfast a slice of it was!

CHEESECAKE with Fresh Strawberry Sauce.

I have been making this cheesecake for nearly 40 years now, and there has never been a cheesecake that compares. The regular recipe calls for Graham crackers, but this time I used some, not so sweet, 4 ingredient, shortbread cookies for my crust, crushing them to crumbs in a my food processor and then I added in a couple tablespoons of melted butter and sugar to taste, and proceeded with the recipe as directed. This recipe would be good without a crust at all. I was thinking maybe I would crush a few of these Saba chips (pic attached) to sprinkle on the bottom to to keep the cheesecake from getting too cooked on the bottom. I will have to give it a try and report back.

For the strawberry sauce I just mash thawed frozen or fresh strawberries with sugar, and often add in some good strawberry jam.

Have you ever tasted the crustless Basque cheesecake? 😋

You can make this burnt Basque cheesecake gluten-free by using a tablespoon of cornstarch or gluten-free flour

I am going to give this a try Beatrix! There is a quiche I make that I add a couple of tablespoons of flour to the mix and it turns out real nice. Thanks for this new suggestion!

HOMEMADE MAPLE SYRUP

Growing up in my preteen and teen years times were tough. I ended up doing most of the cooking in my home and didn’t usually have too much to work with. With even the fake maple syrup being expensive I would boil sugar and water together and add imitation maple flavoring. I made my syrup that way for forty years, until the last 10 years, when I started buying real maple syrup, for it’s health benefits, the B-grade. This past couple of months I find myself puting maple syrup on my butter fried egg with salt everyday, in my coffee and on my toasted and buttered sprouted date manna bread. I decided to start making my own maple syrup again to save money. I made mine today for less than $5 versus almost $12 for a lesser amount of the regular sample syrup. I just boiled a half cup of maple sugar and half cup of regular sugar with a cup of filtered water, for about 5 minutes, and longer if you want it thicker. I also put the zest of one orange in mine today and boy was that ever a good move! Let it cool, and put into a glass jar. I can see using this orange version in iced tea or herbal teas. I think I will do the zest of two oranges next time. Ray Peat highly recommended orange peels for pain and other ailments. Enjoy!

BALSAMIC SYRUP

I made this simple balsamic syrup this morning, to drizzle on my mozzarella “Caprice Salad” supper tonight. I also drizzle it on my macadamia crusted goat cheese salad too, and it is good on roasted Brussels sprouts, topped with goat cheese and on bacon wrapped dated with blue cheese.

Just combine a third cup of balsamic vinegar with 3 tablespoons of sugar, bring to a rolling boil, turn off the heat and cool.

BALSAMIC SYRUP

I made this simple balsamic syrup this morning, to drizzle on my mozzarella “Caprice Salad” supper tonight. I also drizzle it on my macadamia crusted goat cheese salad too, and it is good on roasted Brussels sprouts, topped with goat cheese and on bacon wrapped dated with blue cheese.
