After recent experimentation, i've had success combining mixed-berry juice concentrate with beef gelatin, maple syrup, and coconut oil. You can reduce the concentrate further before adding gelatin, but once dried in the refrigerator the bears are sufficiently gummy. Heat berry concentrate, reduce if desired, whisk in syrup to taste, whisk in gelatin until a maximum tolerability and glass-like state is achieved. Finally, whisk in coconut oil until the texture is sufficiently altered, but not enough to seperate the oil and gelatin . Allow to cool, but not solidify, and dispense the solution into the mold. Refrigerate.
